What does it mean to be mineral-rich?
While ordinary table and kosher salts are made up of 100% sodium chloride, our salts contain a range of minerals essential for good health. Our traditional and natural process results in a precious Korean grey salt that boasts some of the highest concentrations of calcium, potassium, and magnesium of any salt in the world.
What is cheonilyeom salt?
Cheonilyeom translates quite literally to "Sky-Day-Salt" and describes the traditional process for making Korean salt that we still use to this day. Solar Salt or Sun-Dried Salt is harvested from the sea then naturally dried over time in salt flats by the sun. This results in an earthier-tasting salt with a larger/coarser grain!

Our Story
Flavors of Heritage: Josu's Salt and the Incredible Chronicle That Birthed It
Josu's origin traces back to a tale of connection, resilience, and heritage. The story begins a century ago during the Japanese occupation of Korea. Hae-Sin's great-grandfather, Kim Gi Suk, in exile, watched his homeland fall into despair. Post-occupation, when Korea was a shadow of its former self, Kim Gi Suk saw an opportunity to rebuild. He leveraged Korea’s rich coastline, known for its mineral-heavy saltwater marshlands. With refrigeration a luxury then, sea salt was crucial for preservation. Kim Gi Suk's vision led him to the peaceful Imjado Island, away from the political unrest that would later split North and South Korea.
Here, amidst uncertainties, Kim Gi Suk's family took a perilous journey to join him, navigating the treacherous border in the dead of night. On Imjado Island, Kim Gi Suk's proposition was simple: transform the land into salt ponds, and in return, help build infrastructure to support and grow the community. Over decades, 300 acres became salt farms, with revenues driving community development. Today, while modern techniques are employed, the salt is still sun-dried and the farm remains with Kim Gi Suk's descendants. For Hae-Sin and her partner, Parker, this salt isn’t just an ingredient – it’s a legacy. Residing in San Francisco, they continue to cherish the rich history of Josu, seeing it as a bridge connecting the Korean diaspora to their roots. Each salt variety they introduce is a nod to this intertwined tale of family, perseverance, and heritage.
